ARDRAKA PAKA (parfei ginger)
Ingredients

Ginger – 250 g
Jaggery – 250g
Clarified butter (ghee) – 125 g
Dry ginger powder – 25 g
Cumin – 25 g
Black pepper – 25 g
Nagxar
(Misoa feria), if any – 25 g
Cardamom – 25 g
Cinnamon – 25 g
Indian Bay Leaves – 25 gm
Long pepper – 25 g
Coriander powder – 25 g
Vidanga
(Representatives of Empilia), if any – 25 g
Total quantity – 20 small pieces

How to prepare

In a heavy-bottomed skillet, add jaggery, and cook until thick syrup forms. Then add the grated ginger, stir and cook for 5-7 minutes over low heat. Add ghee, mix well and cook for another 5-10 minutes. Now we add the powder of all the above ingredients and cook for another 5-10 minutes and spread the content on a plate greased with ghee. Sesame seeds can be added to increase its volume and increase health benefits. Let it cool down before cutting into any shape. When cooling, store in an airtight container. It stays for about a month.

Cowpeas / soybeans – 1/2 cup (25 g)
Ragi flour – 30 g
Jaggery syrup – 15 g
Grated coconut – 30 g
Margarine – 10 ml
Total quantity: 4-5 pies

How to prepare

Soak the beans / soybeans for 4 hours, cook well in a pressure cooker, then add the pumpkin chunks and cook again with a cup of water. Add ragi flour and boil for a few minutes. While continuing to stir, add the jaggery syrup, peeled coconut, and ghee, and mix well. Make little pies
