Health benefits

Pumpkin contains antioxidants like alpha-carotene, beta-carotene, and beta-cryptoxanthin. Pumpkin is rich in Vitamin A, E, and C, iron and folate, which can help boost your immune system. It is also one of the best sources of lutein and zeaxanthin, two compounds linked to reducing the risk of age-related macular degeneration and cataracts. It is a source of soluble dietary fiber and protein, which play an important role in reducing bad cholesterol. They also contain steroid compounds called phytosterols, which are effective in maintaining standard cholesterol levels. It is also a source of many minerals such as calcium, magnesium and zinc, so it can be used to improve bone density. I am an excellent diabetic food too if salt is used in place of jaggery or sugar
